Fueron analizadas un total de 72 muestras aplicando la metodología<br />de referencia. S. aureus se detectó en el 69,44% de los quesos; cargas por encima de 103 UFC/g<br />en el 41,67% de las muestras y superior a 105 en el 8,34%; los coliformes totales y coliformes<br />fecales se presentaron >1100 NMP/g en el 97,22% y 87,50% respectivamente de los quesos<br />examinados; mohos por encima de 103 UFC/g en el 26,39% y levaduras superior a 103 UFC/g en el<br />65,28%. Los rangos fueron: S. aureus entre < 1,0x102 y 5,0x106, coliformes totales entre 23 y<br />>1100, coliformes fecales entre 9 y >1100, mohos entre <1,0x10 y 1,6x106, levaduras entre<br />3,1x102 y 8,3x105 . El coeficiente de correlación, evidencia un grado de asociación insignificante<br />entre S. aureus y los grupos de microorganismos indicadores investigados . Al comparar los<br />resultados con los requisitos microbiológicos exigidos para este tipo de producto, se concluye que<br />manifiesta una gran deficiencia higiénica y representa un peligro latente como vehículo de<br />intoxicación estafilocócica para el consumidor, a la par de otros riesgos relacionados con<br />enfermedades originadas por agentes entéricos, pues el 98,61 % de las muestras clasificaron<br />como rechazables por presentar coliformes fecales por encima de 10 NMP/g. Se sugiere la<br />implementación de un programa para mejorar la higiene del queso blanco fresco de venta en<br />Mérida.</p><p>Abstract<br />Epidemiological data revealed that Staphylococcus aureus was leading microorganism in food<br />outbreaks caused by white cheese in Venezuela. A study to quantify the presence of S. aureus was<br />carried out in white fresh cheese marketed in the city of Mérida-Venezuela. S. aureus was related<br />some traditional indicators of sanitary quality, such as : total coliforms, fecal coliforms, molds and<br />yeasts. Official methods were use to analyzed 72 samples of cheeses. The correlation coefficient evidences the counts of S. aureus were<br />not significantly association between S. aureus and the investigated indicator groups . To compare<br />our results with the microbiological requirements demanded for this product type, we conclude that<br />white fresh cheeses analyzed were poorly hygiene and they represent a latent risk as vehicle of<br />staphylococcal food poisoning for the consumer, at time other risks related with infections for enteric<br />microorganisms because 98,61% of the samples were rejectable according to the limit of 10 MPN/g<br />for fecal coliforms .
